Since I come from the Tausug Tribe, It is a requirement that every female from my group learn how to cook a traditional dish before getting married and starting a family. My family is the best instructor and always serves up traditional meals. Tiyula itum is their area of expertise. HISTORY OF TAUSUG FOOD CUISINE

              The origins of Tausug cuisine can be found all across the Philippines, from Sulu to Zamboanga and even in some regions of Southern Palawan. From savory dishes to sweet treats, the origins of Tausug cuisine may be found in the adjacent Malaysian state of Sabah, which boasts of a long history that predates the arrival of the first Spaniards.
Most Tausug food is frequently prepared in accordance with Islamic Halal dietary standards and is intended for community feasting. Typically, weddings, funerals, and other special occasions call for dishes like beef kulma, chicken piyanggang, and lokot lokot.

1. Tiyula Itum


       Tiyula Itum, a dish from Tausug, Sulu in Mindanao. This black soup is usually served during special occasion like Muslim weddings and is known to be one of the dishes served to Royalties.
This dish takes its name from Tiyula which means soup or stew and Itum which means black. The soup’s color came from the burnt coconut meat which flavors the dish making it unique from any other dish found in the Philippines.

2. Chicken Pyanggang


        Chicken pyanggang is a chicken dish from Mindanao. Here, chicken is marinated in a curry paste made from blackened coconut. Feel free to adjust the spice level of this Filipino dish by adding or lessening the amount of chili.

3.Beef Kulma 

            Beef kulma is a beef curry dish in the Philippines that closely resembles Korma, it might be where the dish has originated from as the name is very similar. In Mindanao some call it kulma some kurma and this dish is curry of tender beef cooked in coconut milk, peanuts, tomato sauce and curry spices, it’s like a cross between Beef Curry and Kare Kare.

4. Panyam


       Panyalam or panyam, is a traditional Filipino-Bangsamoro fried rice pancake. It is made with ground glutinous rice, muscovado (or brown sugar), and coconut milk mixed into a batter that is deep-fried. Panyalam originates from Mindanao and nearby islands.

5.Lokot- lokot

           The Lokot-lokot is made of rice flour, which is repeatedly pounded until it becomes fine powder.Water and other ingredients are then added and blended to create a thick mixture. The mixture is poured in a strainer with holes called ulayan and formed into rolls using two wooden spoons called the gagawi.


Therefore The Tausug culture must be preserved and continued to be treasured, and this meal serves as a variety of dishes and flavors. This dish is a representation of the Tausug tribe in the Philippines, who use food to communicate their love and concern for others.
